What makes a pre-prepared recipe “essential” for Mother’s Day this Sunday? These are the recipes that we go back to when we just need a little comfort after a chaotic week. The recipes that are best shared with no-one other than your mum when spoiling her on Mother’s Day or a dear friend over a teatime treat. It is a recipe you’ll enjoy having in your apron pocket that is best served spoiling a loved one over a chitchat even though we are all so busy.

Warm Banana bread is a healthy recipe, it’s something sweet and extra special and should only be baked for an occasion which involves a cup of tea and a long, relaxing afternoon conversation indulging in a crave-inducing loaf. This recipe should be made any place, anywhere and will guarantee to have your home smelling of delectable aromas and eat to your hearts content.

Shopping List:

300 grams wholemeal flour
225 grams brown sugar
115 grams unsalted softened butter or margarine
100 grams coarsely chopped walnuts
60 ml milk
3 medium-sized bananas, chunky or mashed (to your preference)
2 large eggs
1 teaspoon vanilla essence
1 teaspoon baking soda
½ teaspoon salt

Method:

Preheat the oven to 180°C/ Gas mark 4/ 350°F. Line the bread pan with greaseproof paper, leaving enough grease proof paper to hang over the sides. Using melted butter, brush the inside of the pan.

In a large mixing bowl, combine the softened butter and sugar until light and fluffy.

Next add in the eggs and whisk until the mixture is smooth and mixed thoroughly.

Whisk in the milk and vanilla essence into the batter. Once combined add in the bananas either in chunks or mashed as you prefer and using a wooden spoon, mix them into the batter.

Once the banana is blended nicely into the batter add in the flour, baking soda, and salt. Using the wooden gently stir until there is no more flour visible. Lastly add in the walnuts and gently fold them in.

Pour the batter into the pan and bake in the oven for 50 to 60 minutes, until the top of the cake is caramelised and crisp and the inside is nice and fluffy.

Allow to cool for 10 minutes and remove the loaf using the excess greaseproof paper and enjoy!
